Yarra Yering Dry Red No. 1 Cabernet Merlot blend 2019
Yarra Yering Dry Red No. 1 Cabernet Merlot blend 2019
The wine displays deep, vibrant red/purple hues with a bouquet redolent of violets, briar, cassis, cedar, and crushed leaf Cabernet aromas. The palate exhibits remarkable elegance, balance, and intensity, with oak influence subtly integrated. The finish is prolonged, with a hint of sappiness in the tannins.
The Yarra Yering Dry Red No.1 is primarily a blend of Cabernet Sauvignon and Merlot, complemented by small portions of Malbec and Petit Verdot sourced from a prestigious site in the Yarra Valley.
Individual batches undergo fermentation in small open-top tea-chest fermenters, allowing the final blend to reflect the nuances of each unique growing season at this renowned estate. Renowned for its excellence, this wine epitomizes the distinguished Cabernet style of the Yarra Valley and holds promise for exceptional aging potential. Winemaker Sarah Crowe has excelled in crafting this wine, making it a must-have for serious Australian cellars. Hand-harvested grapes undergo meticulous sorting, ensuring only the finest berries contribute to the final blend. The Cabernet grapes are crushed to enhance structural integrity during fermentation, while Merlot, Malbec, and Petit Verdot undergo whole berry fermentation to enhance fragrance and palate depth. The wine is aged separately in French oak barrels, with only 40% being new, for 15 months before blending and bottling.Â
