Nick and Sarah make single vineyard, low-intervention wines with left of centre varieties and techniques. The wines are made with a light touch, avoiding fining and filtering. The 2022 Mourvedre is hand-picked over two days in late April 2022, whole bunch fermented, while the other was destemmed. Both batches were foot-trodden and allowed to ferment naturally with indigenous yeasts.

The resulting wine was gently basket-pressed into a single seasoned French Hogshead, where it matured with care until bottling, unfiltered and unfined. It displays aromas of ripe black plum, smoked meats, violets, and black pepper.
