In 2021, the winemaker crafted a Pinot Noir that's meant for the long haul. It's a bit tight and reserved right now, but with some air, it starts to open up, revealing flavors like redcurrant, cranberry, sour cherry, herbs, and a hint of Aussie bush vibes. The tannins are strong at first, leaving a dry finish with a bit of a bitter, amaro-like edge. If you're patient, this wine will really shine in time.
Keppell Smith started his wine journey in '96, learning winemaking at CSU and getting hands-on experience with Phillip Jones at Bass Phillip. He now runs a 40-hectare property, Savaterre, with 8 hectares dedicated to close-planted chardonnay, pinot noir, shiraz, and sagrantino at 440 meters above sea level. He practices organic farming and uses winemaking methods inspired by European traditions.
