Mount Mary Triolet 2016

Mount Mary Triolet 2016
Mount Mary is a family-owned, single-vineyard estate situated in the heart of Victoria’s Yarra Valley, southeast of Melbourne. Founded in 1971 by John and Marli Middleton, it was among the pioneering vineyards that led the revival of the Yarra Valley as a premier Australian wine region. The first plantings were completed by mid 1972 and today Mount Mary has 40 acres under vine representing 18 varieties.
The Triolet, first produced by Mount Mary in 1987, is a white blend inspired by the classic wines of Graves, Bordeaux. The vineyard is planted with 75% Sauvignon Blanc, 20% Semillon, and 5% Muscadelle. Each variety is harvested at its ideal ripeness, Sauvignon Blanc when herbaceous notes have softened, Semillon when acidity is balanced, and Muscadelle at peak flavour intensity.
Fermented separately, the components are aged in mostly older barrels, with the entire production undergoing barrel fermentation. Firm pressing enhances texture, and lees stirring adds body and complexity. Aged for approximately 11 months, the wine moves beyond primary fruit, developing subtle, layered aromas and a refined structure.
The 2016 is blend of 65% Sauvignon Blanc, 25% Semillon, and 10% Muscadelle.
