Serrat is a boutique winery owned and operated by Tom and Nadège Carson, with support from Kate Thurgood. Tom is an acclaimed Australian winemaker, known for his tenure as Chief Winemaker at Yering Station, where he helped shape the winery’s success.
A career highlight was winning the Jimmy Watson Trophy in 2013 for the 2012 Yabby Lake Block 1 Pinot Noir, the first ever awarded to a Pinot Noir. Since 2008, he has led the Kirby Family Vineyards (Yabby Lake and Heathcote Estate) as General Manager and Chief Winemaker, while also judging at major wine shows.
Serrat reflects their combined expertise and passion, producing small-batch, estate-grown wines of precision and character. The Serrat vineyard was established in 2001, planted at an exceptional density of 8,800 vines per hectare, over four times the Australian average with plantings of Pinot Noir, Chardonnay, Viognier, and a small amount of Grenache. Over the years, the vineyard has expanded thoughtfully, with additions of Nebbiolo, Barbera, Malbec, and Grenache Noir (2010). In 2016, Serrat became the first to plant Grenache Blanc in Victoria, followed by more Nebbiolo and Shiraz in 2017.
This wine is from the Shiraz block planted in 2003 with Viognier from the 2001 original plantings. There are two clones in the block, Best’s Old Block sourced from the original plantings at Best’s Great Western planted in 1868 and clone 1654, a Barossa selection. The Viognier is from cuttings at Yarra Yering, that Tom Carson cut himself in 2000, Dr Carodus told him he had personally taken them from Chateau Grillet in Condrieu in the 60’s. Highly illegal at the time and even more so now.

The fruit intensity is remarkable coupled with the silkiest of tannins. It’s just loaded with fruit and florals and complex Asian spices." Tom Carson
"Best’s old-block clone (70%) and BVRC15 clone (30%). 5% whole bunches; co-fermented with 5% viognier. Matured in 500L French oak (25% new). A deep, bright purple. Brooding and complex with aromas of black cherry, graphite, black pepper and dark licorice scents. You can add some subtle, oak-derived pencil shavings and crushed violets to the mix, too! On the palate, this is simultaneously concentrated, silky and beautifully structured.
