Founded in 1894 by Eugene Saves, this family-run Champagne house is now led by Hervé Savès and his son Arthur. Based in the Grand Cru village of Bouzy in the Montagne de Reims, with additional vineyards in Ambonnay and Tours-sur-Marne, they craft elegant, complex Champagnes with freshness and depth.
Hervé and his family vinify with great care and precision. Their Champagnes do not undergo malolactic fermentation, preserving purity, finesse, and vibrant acidity. The wines are matured for a minimum of 4 years in their cellars before release.
Their 11ha of sustainably farmed vineyards (HVE certified) are planted with 85% Pinot Noir and 15% Chardonnay, on chalky, southeast-facing slopes.
Tasting Notes
60 % Chardonnay and 40% Pinot Noir from Bouzy. Lively and intense bouquet of strawberry, raspberry, and cherry. Rose petals with hint of pepper. Expressive, intense and excellent fruits intensity. Greta balance between richness of pinot noir fruits and the finesse from the chardonnay.
