Whole bunch pressed with the pressings cut fine and fermented separately. Cold settled juices were racked with fluffy grape solids to tank to start fermentation. Once a strong fermentation was established the parcels were transferred to old French barriques to proceed to dryness. To preserve fruit vibrancy the parcels were racked, blended to tank once dry and sulphured to inhibit Malolactic fermentation. A light finning was followed by stabilisation and filtration before bottling in early December 2023.
