Located 50 kilometres north-west of Melbourne in the picturesque Macedon Ranges, ‘Bindi’ is the Dhillon family’s cherished property. Originally part of the larger grazing estate known as ‘Bundaleer’, the land was acquired in the 1950s. Today, the 170-hectare farm includes 7 hectares dedicated to premium Chardonnay and Pinot Noir vines.
At the upper end of the Chardonnay planting, where the quartz incidence in the soil is the greatest the fruit has extra complexity, finesse and intensity. This wine comes exclusively from this soil. This area is approximately half one hectare in size. The characteristics are similar in the Quartz Chardonnay to the Kostas Rind Chardonnay but all aspects are amplified here yet remain in complete harmony.
The winemaking is the same for both wines however the Quartz Chardonnay sometimes spends a few months longer in barrel and there is a higher percentage of new wood used, being around 35%.
Tasting Notes
"There’s a calmness to this which belies the difficult, cool/wet season. But, sometimes, a wine just shines. This is superfine and long with mouth-watering acidity leading and extending across the palate. It’s all about citrus – especially grapefruit with a lemon-saline character and lemon barley water – while the judicious use of oak adds some weight, spice and a slip of tannins; the lees are a gossamer layer of cream.
